About Dr. Michael Cheng
This highly qualified expert has over 20 years of experience in restaurant and hospitality management. He received his BS in restaurant and foodservice administration and his MS in nutritional science & dietetics from the University of Nebraska. He then went on to complete his PhD in hospitality management at Iowa State University. This expert is certified as a hospitality educator by the American Hotel & Lodging Educational Institute. He formerly served as a food production manager and assistant food service manager at the University of Nebraska and as a food service manager at MDS PharmaServices and First Data Resource, respectively. He also served as the program director of the Institute for the Culinary Arts and assistant dean at Metropolitan Community College. In addition, this expert served as the founding director and founding chair of the department of culinology and hospitality management at Southwest Minnesota State University. Currently, he is an associate professor and faculty director of food and beverage at a university in Florida where he also serves as the dean of the hospitality and tourism management school.
